Traditional Baked Cheesecake

I love baked cheesecake and so I thought I would give it a go. I used a recipe for a more traditional sort of baked cheesecake like the ones you’d find in a New York deli. It was a long process to make it all but it was definitely worth it. The base was light and the cheesecake was moist and tart and somehow dense but not overly so. In short I hope I make this again one day.
