Traditional Bakewell Tarts

Happy Valentines Day!

This was a challenge given to me by a friend who simply wanted to see if I could managed to make them. He had heard they were very fiddly to make and wanted to see if  I was up to the task. As you can see they turned out perfectly if a little pale. Very moreish though.


Peach Meringue Tarts


The tart shell is made of amaretti biscuits all smashed up with a bit of butter. The peaches were  in a simple sugar syrup with cinnamon. I made the meringue topping by hand, no electric whisks involved.
